Cheesy Potato Soup
Ingredients:
6 Bacon Strips, diced
3 cup cubed, peeled potatoes
2 cup chicken broth
1 carrot, diced
1/2 cup onion
1/2 cup celery
1 Tb. dried parsely
1/2 tsp. each, celery seed, salt, pepper
3 Tb. flour
3 cups milk
8 oz. Velveeta Cheese, cubed
Directions: In saucepan, cook bacon, drain, and chop. Add potatoes, broth, carrot, onion, parsley, celery seed, salt, and pepper. Cover and simmer until potatoes are tender, (about 15 min.) Whisk flour and milk in separate bowl until flour is dissolved.Add to soup. Bring to a boil: boil and stir it for 2 minutes. Add in the Velveeta cheese. Stir the soup until the cheese is melted. The soup will look creamy and cheesy! This soup serves 8, about 2 quarts.
Caramel Dip
Ingredients:
8 oz. cream cheese
1/2 cup brown sugar
1 tsp. vanilla
1/2 tsp. caramel flavoring
Mix all ingredients with mixer until smooth and creamy. Serve with apple slices.

This is a light dish that is low in calories but high in flavor! I enjoy making this meal often at our house.
It is simple to make and doesn't involve a lot of prep time.
Ingredients:
1/2 of a green pepper, sliced
1/2 of a red pepper, sliced
1/4 cup onion sliced
1/2 cup broccoli
1/2 cup of yellow zucchini, chopped
1/2 cup of pea pods
2 cloves of garlic, minced
Small tomato, chopped
1 Tb. Italian Seasoning
2 Tb. Olive Oil
Parmesan Cheese
Directions:
Put olive oil in frying pan and heat. When oil is warm add all ingredients except tomato.Stir well. Continue to cook over medium heat until vegetables are tender but not mushy. Add tomatoes and cook until they are warm. Serve over angel hair pasta and top with Parmesan Cheese.

I wanted to share this easy recipe today. My family loves pizza and any variety of the ingredients. So to mix it up sometimes I make Stromboli.
Easy Pleasing Stromboli
Ingredients:
Unthawed, frozen bread dough
2 egg yolks, (save egg whites)
1 Tb. Parmesan Cheese
1 tsp. garlic powder
1 tsp. oregeno
1/2 tsp. pepper
2 Tb. Vegetable Oil
1 1/2 c. mozzarella cheese
Inside Yummy Stuff: Pepperoni, Sausage, peppers, onions, mushrooms
Pizza Sauce
Directions:
Preheat the oven to 350 degrees. Separate your egg whites and egg yolks. Only use egg yolks in the next step. Mix all the ingredients, except the pizza sauce, in a bowl. Roll out your bread dough on a greased jellyroll pan or large baking sheet. Cover the dough with the mixture. Make sure you leave a 1/2 inch border around the edge. Spread your "inside Yummy stuff" (cheese, pepperoni, sausage, peppers).Add whichever ingredients your family loves!
Roll dough like a jellyroll. End with the seam down. Brush the outside with the egg whites and cut a few slits in the top of the dough to make let the steam out and make it look pretty! You can sprinkle a little Parmesan cheese on the top if you choose.
The egg whites will give it a beautiful shinny golden brown finish. Bake at 30-35 minutes until the outside is golden brown.

Today we went to a Packer football party and I made these! They were a hit and so easy to make. They kept well in the crockpot all day and didn't get mushy either. Anything wrapped in bacon is good, right?

Ingredients:1 pkg (16 oz) Lil' Smokies
1 pkg (12 oz) thick cut bacon
3/4 cup packed brown sugar

Directions: Preheat oven to 400F. Line a baking sheet with foil. The clean up will be much faster this way! Cut each slice of bacon in to 3 pieces. Wrap each piece of bacon around a sausage and poke through with a toothpick. Sprinkle brown sugar evenly over the sausages Bake for 15 – 20 minutes until the bacon is browned and the sugar is melted. Serve immediately or you can put in a crockpot on warm to keep them warm for a party.

Crispy Chip Chicken Tenders
Ingredients:
1 whole boneless, skinless chicken breast
5-6 oz. potato chips, plain,
bbq, or sour cream
1 egg
2 Tb. milk
Directions:
1.
Preheat oven to
400 degrees.

Cut the chicken
into finger-size strips.

Fill a ziplock bag
with chips and crush.

in the egg mixture and then into the bag of potato chips.

Jan. 20, 2015 Here is another family favorite recipe that I enjoyed as a child. It is simple to make with very little prep time!
Chicken Enchilada Casserole
Ingredients:
1 can of chicken or 1 cup of cut up cooked chicken breast
1 can evaporated milk (10-13oz)
2 cans of Cream of Chicken Soup
1 or 2 cans diced green chilis
2 c. cheddar cheese
9 large flour tortillas
Directions:
Preheat oven to 350 F.Combine all ingredients in a large bowl except for cheese and tortillas. Tear tortillas into small pieces and line a greased 9X13 pan. Pour in 1/3 of the chicken mixture and top with a layer of cheese. Repeat this two more times end with cheese on top. Bake at 350 degrees for 30 minutes.

I tried this recipe today and I LOVED it! It is so delicious and rich with flavor!
Double Chocolate Bundt Cake
- 1 (18.25 oz.) chocolate cake mix
- 1 (3.4 oz.) package instant chocolate pudding mix
- 2 cups sour cream
- 3 eggs
- 1/3 cup vegetable oil
- 1/2 cup water
- 2 cups semi-sweet chocolate chips
Instructions
Preheat oven to 350 degrees. Grease and flour a 10-inch bunt pan. Beat all ingredients (except chocolate chips) until well blended. Mix chocolate chips in. Spoon batter (it will be thick) into prepared pan. Bake for 50 minutes to 1 hour. Cool for 15 minutes in the pan before turning out onto a wire rack to cool completely. It will not come out well if you rush this time. It needs time to cool! Drizzle chocolate syrup or hot fudge over the top to finish! YUM!

I usually use boxed mixes of pancakes and waffles because it is easier. However there are times when you go to grab the box and you look in the cupboard but there is nothing there. Either you forgot to add it to your grocery list or someone else used it up and forgot to replace it! So then you have to improvise because you already promised your kids you were making pancakes! So instead of running to Walmart you can try this! So here's a recipe for that! I actually really like this recipe and I think it's cheaper than buying the mix and probably healthier!
Here's one more chocolate recipe I just NEEDed to share with you! My kids love this popcorn and they request it often for parties, treats for school, or just a snack. It's really easy to make and fun for the kids to help!
White Chocolate Popcorn
Ingredients:
1 bag of Wilton vanilla Candy Melts OR 1 package of white choc. chips
1 cup popcorn kernels OR 1 bag of pre-popped popcorn
Sprinkles
Directions:
Pop your popcorn whichever way you prefer. I use a hot air popper and the popcorn turns out great every time! Then melt your chocolate or candy melts over a double boiler or in the microwave. If you use the microwave heat for 1 minute, stir, and continue until they are melted smooth. Pour the melted candy/chocolate over the popcorn and mix until well coated on all the popcorn. Add sprinkles for a fun festive touch. We add red and green for Christmas, Yellow and Green for Packer season, Red for Valentines or 4th of July, or any other colors to go with the theme of a birthday party! There are many variations of this recipe also. You can add flavorings to your chocolate to make it minty or fruity. You can add candy such as M&M's or chocolate chips to the popcorn to jazz it up too.

Homemade Pancake Mix
Ingredients:
1 1/2 cups all purpose flour (could substitute whole grain flour)
2 Tbls. sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/4 -1 1/2 cups milk
2 eggs
1 tsp vanilla
2 Tbls. vegetable oil
Directions:
Mix all the dry ingredients together(flour, sugar, baking powder and soda, salt) in a large mixing bowl. Make a well in the middle of the mix and pour in 1 1/4 cup milk. If it seems a little dry or stiff slowly add up to a 1/4 cup more. Add the two eggs, vanilla, and oil. Whisk until mixed but still a little lumpy. Heat a frying pan or griddle. You will need to spray either or use a little oil. When heated you can add the pancake mix. I like to use a 1/4 or 1/3 measuring cup to scoop the mix and pour. It works really well, especially if the kids help!

I tend to make the same old recipes over and over and get tired of them. Sometimes an oldie but goodie is good, but sometimes you need to get out of your traditional "rut". So here's a new one that got our taste buds flying!
Ingredients:
4 boneless skinless chicken breasts
8 ounces fresh mozzarella, sliced into 8 slices
1 12 oz jar of roasted red peppers sliced into 1 inch pieces (about two whole red peppers if you roast your own)
1 bunch of basil, whole leaves
1/4 cup fresh grated parmesan
1 tablespoon Italian seasoning
Salt and pepper for seasoning

No Bake Granola Bars
- 1/4 cup butter
- 1/4 cup honey
- 1/3 cup packed brown sugar
- 2 cups quick cooking oats {not rolled oats!}
- 1 cup crispy rice cereal
- 1/2 teaspoon vanilla
- 2 tablespoons mini chocolate chips or raisins, or other add ins
- Directions:
- Line a small jelly roll pan (12x8x1) with wax paper. Stir in stir oats and rice cereal together in large bowl. In a saucepan, melt the butter, honey and brown sugar together over medium high heat until it begins to bubble. Turn the heat down to low and cook for an additional 2 minutes, constantly stirring. Then add the vanilla. Pour the mixture over the dry ingredients and gently fold until evenly coated. Put entire mixture into about 1/2 the pan. Press down to make bars about 3/4 inch thick. Sprinkle with mini chocolate chips or raisins and press down lightly. Cool to room temperature (about 2 hours) before cutting. To store, wrap in plastic wrap and leave at room temperature.

Dinner in a Pan
Ingredients:
1 lb. of ground beef
2 cans of diced tomatoes (we like petite diced)
1/4 cup dried minced onion
1 cup canned corn, undrained
1 tsp. salt
1 tsp. chili powder
1/4 tsp. pepper
1/4 Tbs. sugar
1 cup uncooked elbow noodles
Directions:
In a skillet brown the ground beef. Drain of the extra fat. Add your tomatoes, corn and seasonings. Bring these ingredients to a boil. Reduce the heat and simmer for 5 minutes. Then add your noodles, cover and simmer for about 15-20 minutes until the noodles are soft and tender.

Roasted Red Pepper, Mozzarella and Basil Stuffed Chicken
Ingredients:
4 boneless skinless chicken breasts
8 ounces fresh mozzarella, sliced into 8 slices
1 12 oz jar of roasted red peppers sliced into 1 inch pieces (about two whole red peppers if you roast your own)
1 bunch of basil, whole leaves
1/4 cup fresh grated parmesan
1 tablespoon Italian seasoning
Salt and pepper for seasoning
Directions:
Preheat oven to 400 degrees. Grease a 9x12 casserole dish. Butterfly chicken breasts by slicing into the long side of the breast, stopping just about 1/4 of an inch from the opposite side. Lay chicken breast in casserole dish opened up. Sprinkle the insides of the chicken breast with 1/2 of the Italian seasoning and salt and pepper. Stack the roasted red pepper, basil, and 1 slice of the mozzarella on the bottom side of the chicken. Fold the top flap of the chicken over, tucking in the mozzarella, basil and roasted red pepper as necessary. Sprinkle with the remaining Italian seasoning. Bake chicken for 30-40 minutes (until chicken is no longer pink). Pull chicken out of oven and turn the oven to a high broil. Top chicken with remaining mozzarella slices and sprinkle with Parmesan cheese. Broil until cheese is browned and bubbly, about 5 minutes. Enjoy!
Jan. 28, 2015 I made this salad for a get together and it was a huge hit! It's simple to put together and doesn't have too many ingredients to gather up!
Tortellini Salad
Ingredients:
-1 package of tortellini
-1 cup mozzarella cheese, cubed
-1 cup mini pepperoni, or regular pepperoni chopped
-1 cup cherry tomato, halved
-1/3 cup fresh basil, chopped
-2/3 cup Caesar salad dressing
Directions:
Cook your tortellini according to the package. Drain and rinse with cold water to stop the cooking process. Put cooked tortellini in a large bowl. Add the remaining ingredients ans stir gently. Refrigerate for at least 1 hour before serving.
